Our Project
The Zavalla Prairie has been welcoming settlers since the early 1800’s. Those that came in the beginning from England, later settlers from America’s Southern States, and finally those of us that more recently called this area home have all contributed to a unique culture and history. The food is a collection of the most basic of country faire brought from the southern US settlers in to Zavalla, however it is heavily influenced by the Mexican roots of Republic of Texas, the Cajun and creole of the Louisiana neighbors, and bounty of the rivers and forest of the region and the game available in abundance.
This project will encompass the history of the area focusing on the families that settled it and call it home today. The recipes featured are handed down or inspired by those that populated the area, and influenced the current community of people that call it home. We hope to capture the essence of the present day while honoring and preserving the past.
